In the olive mill Our olive mill is used exclusively for the
olives from our own groves. We personally monitor all of the critical
processes, which are:
The removal of leaves and washing of the carefully selected olives
within 12 hours of picking.
The oil extraction, using traditional pressing methods modified
through numerous technical improvements and continuous innovative
research. This results in an extremely controlled cold pressing
without the use of running water and with procedures which avoid
the risk of uncontrolled collateral reactions.
The careful storage of the resulting oil in stainless steel
tanks, under nitrogen, protected from the light and in a temperature
controlled environment. This ensures that the characteristics
and aromatic freshness of the oil remain unaltered. The same scrupulous
attention is given to the bottling process and the sealing of
the bottles, all carried out in such a way as to preserve the
integrity of the contents.
